We have many of our classic Country Choice and indeed our home dishes in the book. The foods from us that are featured are part of the long and magic journey of 28 years at Country Choice. Many of the recipes such as 'Collared Head' are part of our two great family legacies in Irish Country food.

They represent some of our past family members and are part of our family heritage.

I've been all over Ireland in recent years, and have found a lot of wonderful places to eat, drink, and/or buy good Irish food products. Country Choice, though, is something special to me. It was Peter Ward, in fact, who first called my attention to the culinary riches of Ireland. I found his passion for, and knowledge of, traditional Irish cooking and the country's impeccable raw materials to be seductive and inspiring, and it is not an exaggeration to say that it was because of things I first sampled at Country Choice or in Peter and Mary Ward's homey kitchen nearby that I fell in love with Irish food and the island's gastronomic possibilities in the first place.

COLMAN ANDREWS
Colman Andrews was the co-founder of Saveur magazine, and its editor-in-chief from 2002 to 2006, and subsequently the last restaurant columnist for Gourmet magazine before its demise. He is the co-author and co-editor of three Saveur cookbooks and five of his own books on food: “Catalan Cuisine”, “Everything on the Table”, “Flavors of the Riviera”, "The Country Cooking of Ireland", and "Ferran: The Inside Story of El Bulli and the Man Who Reinvented Food" (to be published in fall 2010).

Andrews has been writing professionally about food, wine, and the arts since 1968 and was a restaurant reviewer and restaurant news columnist for the Los Angeles Times and wine and spirits columnist for Los Angeles Magazine. One of the first 50 food and wine figures to be named to "Who's Who of Cooking in America", Andrews is the recipient of the 1996 Bert Greene Award for magazine food journalism and of six James Beard awards, including the 1998 M.F.K. Fisher Distinguished Writing award and, most recently, the 2007 Best Magazine Feature Writing with Recipes award, given for “Delicious Ireland”, his issue-length series of stories about the cooking, food producers, and food products of modern-day Ireland. “The Country Cooking of Ireland”, published in America in 2009, grew out of that series. Andrews, who lives in New York City and Connecticut, travels frequently to Ireland.
